I have shared this vegetarian lunch prep before. Two cans of black beans, one can of pink or pinto beans, one can of crushed tomatoes and half a cup each of basmati rice and quinoa cooked together. Season the beans however you like, chili or Indian spices both work. Divide into five lunches and top with a little cheese. Each serving has 591 calories, 31 g protein, 86 g carbs, 16 g fibre and 13 g fat. Cooling the rice turns it into resistant starch so carbs drop to around 80 g and fibre rises above 20 g, which also helps gut health. I sometimes add edamame or chopped vegetables if they are in the fridge. For more protein you can include seitan to reach 50 g.
